The evening is shaping up....

....I know what we're having for dinner (greek impossible pie),
....my toenails are happy and newly-pedicured (a rich blue, if you really care),
....the clothes are folded,
....AT&T sent me a check for $75 to switch to their service that's actually a penny less a minute than the one I'm currently on (also with AT&T),
....the furnace is heating up the house,
....the cat is purring behind my shoulder (having finally agreed that it's too cold and damp to be outside)
.....and we're going to the gym tonight!

Greek Impossible Pie
It's a bisquick recipe, modified.

I brown 12 oz of sausage, add some chopped onion, minced garlic, 1 box of thawed chopped spinach and some feta.
Season to taste using oregano, rosemary, etc. (italian herb mix works well, too).

Place in a greased (or pammed) pie pan. Sprinkle with 1/2 to 1 C grated cheese (for greek pie, i use mozeralla)

Mix 1 cup milk, 2 eggs and 1/2 cup of bisquick. Pour over ingredients in pie pan.

Bake at 400 for 25 minutes.

(it's a variation on the cheeseburger impossible pie recipe on the side of the bisquick box.)
