Domestic Goddess-ness

Hrm. That recipe didn't make as much jam as I thought. 10 cups of rhubarb (well, 8 cups of rhubarb, 2 cups of marionberries) yielded 3 1/2 12 ounce jars of jam. It's pretty tasty, though, if I say so myself.

And the color? Gorgeous!

I think maybe I should make more jams and jellies. Every couple of years I think I'm going to do it during the year and pack homemade gift baskets for the holidays. Maybe this is the year!

I need to find some fun recipes for blueberry perserves...

I'm such a know-it-all....
a couple of things affect your yield, probably the biggest one is pectin. if you didn't add pectin, you have the rely on the pectin in the fruit. if you don't have about 30% of the fruit under-ripe, you'll have less jam and looser texture.

But interesting things to know!!!

I think I'm just going to acquire more rhubarb (John's folks have a couple nicely producing plants) and make another batch...but put it into smaller jelly jars. It might end up with the same yield, but it'll be more jars. :)

Sounds good to me.
Things we must have. Jar funnels and jar lifters. :)

I'll find my jar lifter this weekend during the yard sale festivities.
(it's in a box down there, somewhere).

Jar funnels will make filling jars much happier. (and hot boiling berries don't talk back nearly as much as the asparagus did!)

I want to make strawberry, raspberry, and nectarine jam. I wouldn't mind making some apple jelly or apple butter, either.
